Hickory imparts a strong, full-bodied flavour. Slightly spicy but beware not to over smoke as this will leave your dish too bitter to taste. Very popular in American barbecuing Hickory is very good with pork and bacon. Hickory smoking can give your food a dark brown colour.
Soak these in warm water for 30 mins before placing on white hot coals.
